Eating shabu-shabu in a copper pot 銅鍋涮肉 is Eating shabu-shabu in a copper pot 銅鍋涮肉 is a popular choice in Beijing when the season Fall is just around the corner! Besides, it’s quick and perfect for group gathering.🤗

The origin of hot pot is unclear. One of the most popular stories is related to Kublai Khan, the founder of the Yuan Dynasty. According to folklore, Kublai Khan led his army southward. One day, he craved for a dish from his hometown - lamb stew, so ordered his chef to start making it. When the chef was still in the middle of cooking, the enemy started to approach. The chef improvised and cut off a few thin slices of meat, stirred them a few times in boiling water, sprinkled with salt, and served immediately. After having a few servings of the lamb slices, Kublai Khan went on to the battle field and won.

Donglaishun, founded in 1903, is one of the most famous copper pot shabu-shabu restaurants in Beijing. Their speciality, the traditional lamb shabu-shabu, was acknowledged as intangible cultural heritage in 2008. They are known for serving different cuts of lamb and all is tender, smooth and refreshing, with typical sesame dipping sauce. Their copper pots are all cloisonné pots using enamel filigree technology, which are particularly beautiful!
